No Bake Cookies

Yummmmm…..that is what comes to mind when I read/hear/speak those words.  I could seriously live on No Bake Cookies.  I probably wouldn’t live very long…but I would so be willing to try!

I personally prefer my cookies with less peanut butter than others…but you are always free to play around with a recipe to make it yours.  In fact, I highly encourage you to experiment with recipes…you might be able to tweak something better to match your preferences.  Just have fun and don’t hold back!

Here is my recipe that I have adapted to fit my personal tastes!

No Bake Cookies

1 stick butter

2 c. sugar

1/4 c. cocoa

1/2 c. milk

1 t. vanilla

1/4 c. peanut butter

2 c. oats

Melt the butter in a saucepan.  Add the sugar, cocoa, and milk.  Allow it to come to a boil.  Boil for one minute.  Remove from heat.  Add vanilla and peanut butter.  When the peanut butter is completely melted, add the oats.  Spoon the cookies out onto an aluminum foil covered countertop.

Try to allow them to cool before you demolish them all!  It is extremely difficult!!

Shishkabobs!

Well, it was time for some shishkabobs!  As usual, I turned to FoodNetwork.com.  It holds a wealth of wonderful recipes.  I usually stick to the same chefs when looking for foods.  Some are just pure geniuses!  We (my mom and I) were wanting to grill the Kabobs, and normally when I want to grill something, I turn to Bobby Flay.  He is the grill master.  (Incidentally, my son thinks Bobby’s middle name should be Sue).  Anywho, I have made Tyler Florence’s Chicken and Pineapple Skewers before, and they are divine!!  So, we decided to go with his Kabobs recipe.  His sauce is just the best. I always tweak it a little by adding more brown sugar and less garlic and soy sauce.  And when I build the Kabobs, I always add bell peppers.  I tried this recipe at home once, and since I live in an apartment complex that does not allow grills, I put all the ingredients in a lasagna pan.  It turned out great, too!

 

Here is the recipe!

 

Chicken, Pineapple, and Pepper Shishkabobs

 

4 boneless, skinless chicken breasts

1 fresh pineapple

4 bell peppers, assorted colors

1 c. ketchup

1/8 c. soy sauce

1/4 c. honey

1/2 c. brown sugar

1 T. prepared mustard

1 1/2 T. lemon juice

1 t. garlic powder

Bamboo skewers

Mix the ketchup, soy sauce, honey, brown sugar, mustard, lemon juice, and garlic powder in a saucepan over medium heat.  Cook about 10 mins.

 

Take the bamboo skewers and soak them in cold water while you complete the next step.

 

Peel, core, and cut the pineapple into chunks.  Cut the chicken into approximately 1 inch cubes.  Chop the peppers into 1 1/2 inch pieces.

 

Start assembling the Kabobs, alternating the chicken, pineapple, and peppers.

 

Divide the sauce in half. Use one half to brush the skewers.  Over a medium-high grill, cook the skewers, turning them after about 5 minutes.  Brush with more sauce.  Use the other half of the sauce for dipping.  The shishkabobs should be done after about 10 minutes on the grill.
